BEVERAGE TRAINING – SERVER LEAD LEARNING
Challenge –
Training service professionals is a constant challenge from many points, including but not limited to the fact that not all servers work full schedules, not all servers are as equally vested in learning, skill levels and product knowledge are not always equal, participation is often sporadic or interrupted (depending on scheduling, business volume and willingness to enforce meeting times). In short, many challenges face the implementation of successful, long-term beverage training programs.

Training service professionals is a constant challenge from many points, including but not limited to the fact that not all servers work full schedules, not all servers are as equally vested in learning, skill levels and product knowledge are not always equal, participation is often sporadic or interrupted (depending on scheduling, business volume and willingness to enforce meeting times). In short, many challenges face the implementation of successful, long-term beverage training programs.
Goal –
- The primary goal of this program is to provide servers and bartenders with the opportunity to participate in the discussion and process of better beverage training
- Additionally the goal of this program is to improve the overall server knowledge level with regard to beverage service, knowledge and concepts needed to operate a great restaurant
- The underlying goal here is to do this over the long-term so that each server has the best and most consistent opportunity to learn and provide guests with great service.
- Each server will be assigned a product or menu listing to research and present to their co-workers on an assigned date, typically during the pre-shift meeting
- It is recommended that there will be three server lead trainings to be researched and discussed on a weekly basis, with several categories recommended being done on a rotating basis (this is of course dependent on the style and needs of the staff and the restaurant:
- Wine (weekly)
- Spirits & Liqueurs (weekly)
- Beer (alternating weeks)
- Cocktails (alternating weeks)
- Non-alcoholics, Service Skills (alternating weeks)
- This should be mandatory and held with the intent to be done as an on-going aspect of being a service professional
- FOH Managers should track the rotation and maintain a sign-up sheet for participation
- The FOH management team will provide a job-aid (see below) for the servers to use as a template for creating discussion points on their topic of choice
- Samples, especially for wine, should be coordinated ahead of time with the respective suppliers
- Any hand-outs or other material can be coordinated through the location FOH team or through industry suppliers
- STAFF – periodic quizzes and tests can be administered to confirm and reinforce the training material
- MANAGEMENT – periodic review of the process should be conducted to insure the plan is on-going, process is meeting expectations, and modifications are implemented as needed
